An open flame burns at nozzles (injectors) sized for a specific gas type — liquefied petroleum gas (LPG, cylinder-fed) or mains natural gas (NG). Burner output is tiered: auxiliary — 1.0–1.7 kW, semi-rapid — 1.75–2.6 kW, rapid — 2.6–3.3 kW, and a wok burner (turbo, with a double or triple flame ring) — 3.5–5.0 kW for high-heat wok cooking.

  • Pros: instant control from zero to maximum heat, works during a power outage (except models with electric ignition and no battery backup), familiar to most cooks, cheap to run where gas is priced low.
  • Cons: open-flame efficiency is only about 40–55%, with heat escaping around the pan; a hood with outdoor venting is mandatory; cast-iron grates are heavy and need regular cleaning.
  • What to check in the spec: a flame failure device (thermocouple) that shuts off gas within 30–90 seconds if the flame goes out — required by code in most countries; the factory should supply both nozzle sets (LPG and NG) — without the correct injector a burner either produces soot or won’t ignite at full power.

Electric cooktops: coil or ceramic glass

  • Cast-iron coil (solid hotplate). The cheapest and increasingly outdated option: a long heat-up time (8–10 minutes to reach working temperature), uneven heat across the plate, but the most impact-resistant surface and works with any cookware regardless of base material.
  • Ceramic glass (Hi-Light, halogen or ribbon element under roughly 4 mm of tempered glass). A smooth surface, faster to heat than coil and easier to clean, with about 65–70% efficiency. Zone output: 1.2–2.3 kW. A residual heat indicator is mandatory — the glass stays hot for 10–15 minutes after switching off.

Pros of ceramic glass: more even heating than coil; a flush surface with no raised burners; a timer and child lock on most models. Cons: slower response than gas or induction; uneven or thin-bottomed cookware heats unevenly; the glass scratches if heavy pots are dragged across it.

Induction cooktops

A coil beneath the glass creates an electromagnetic field that induces eddy currents directly in the ferromagnetic base of the cookware — the pan itself heats up, not the cooktop. The glass around the pan stays cool.

  • Cookware requirement: the base must be ferromagnetic — check with an ordinary magnet: if it sticks to the bottom, the pan works. Aluminum, copper, glass, and some ceramic cookware without a magnetic disc in the base will not work.
